Desserts Recipes - Panna Cotta Recipe

Ingredients

SERVES 6

  • Butter for greasing

  • 750ml/1pt 4fl oz double cream

  • 3 teaspoons gelatin

  • 1 vanilla bean

  • 75g/30z caster sugar


Method:

  1. Lightly grease the insides of 6 x 150ml/5fl oz ramekins. Place 3 tablespoons double cream in a small bowl.

  2. Sprinkle the gelatin in an even layer over the surface and leave to go spongy.

  3. Put the remaining cream in a pan with the vanilla bean and sugar. Heat gently, stirring until almost boiling.

  4. Remove from the heat and whisk the gelatin into the cream mixture until dissolved. Pour into the ramekins and chill for 2 hours.
