Lime Pancakes Recipe

100g/4oz plain flour

egg white
-
250ml/9fl oz milk
-
4
tablespoons cold water

Oil for frying
For the filling:
Method:

Make the pancake
batter by beating together the flour, egg white,
milk and water in a bowl until
smooth.

Heat the oil in a frying pan and
pour in a little batter to coat the base. Swirl
it around the pan
to coat evenly.

Cook the pancake until golden,
then toss and coat the other side. Slide on to a
plate and and prepare a further 7 pancakes.

To
make the filling, mix the bananas, syrup and
lime juice in a pan and simmer
gently for 1 minute.

Spoon into the pancakes and
fold into quarters.
