Ingredients

225g/8oz plain
flour
-
1 1/2 baking powder
-
50g/2oz caster
sugar
-
1 egg
-
15g/1/2oz butter
(melted, plus extra for greasing)

300ml/1/2pt milk
-
1 dessert apple
(peeled, cored and grated)

50g/2oz dark
chocolate chips
Method:

Sift the flour and baking powder into a mixing bowl. Stir in the caster
sugar.

Make a well in the centre and add the egg and
butter. Gradually whisk in the milk to form a smooth
batter. Stir the apple in with the chocolate chips.

Heat a heavy-based frying pan over a medium heat and
grease it lightly. For each pancake, place 2
tablespoons of the batter on to the pan and spread
to make a 7.5cm/3in round.

Cook for a few
minutes until you see bubbles appear on the surface
of the pancake. Turn over and cook for a further 1
minute. Remove from the pan and keep warm.

Repeat
with the remaining batter to make about 12 pancakes.
To serve, stack 2 or 3 pancakes on individual
serving plates.
