Puddings Recipes - Fruity Bread Pudding Recipe

Ingredients

SERVES 4

  • 75g/3oz mixed dried fruit

  • 150ml/1/4pt unsweetened apple juice

  • 3-4 slices day-old white bread (cubed)

  • 1 teaspoon mixed spice

  • 1 large banana (sliced)

  • 150ml/1/2pt milk

  • 1 tablespoon demerara sugar


Method:

  1. Preheat the oven to 200°C/400°F/Gas mark 6. Place the dried fruit in a small pan with the apple juice and bring to the boil.

  2. Remove the pan from the heat and stir in the bread cubes, mixed spice and banana.

  3. Spoon the mixture into a shallow 1.2 liter/2pt ovenproof dish and pour the milk over.

  4. Sprinkle with demerara sugar and bake for 25 to 30 minutes, until firm and golden brown. Serve hot or cold.
