Method:

Preheat the oven to
180°C/350°F/Gas mark 4. Grease a 1.2 liter/2pt
pudding basin and place a small circle of baking
parchment in the base.

Spoon in the walnuts and
dates. Place the egg yolk in a heatproof bowl. Add
the vanilla essence and the sugar.

Place the bowl
over a pan of simmering water and whisk to thicken.
Remove from the heat.

Sift the flour and cocoa into
the mixture and fold in. Stir in the milk. Whisk the
egg whites and fold them in.

Spoon the mixture into
the prepared basin and bake for 40 to 45 minutes, or until the pudding has risen well and is firm
to the touch.
