Puddings Recipes - Chocolate Rice Pudding Recipe

Ingredients

SERVES 6

  • 75g/3oz short-grain rice

  • 300ml/1/2pt milk

  • 50g/2oz caster sugar (plus 1 tablespoon extra)

  • 3 egg yolks

  • 300ml/1/2pt double cream

  • 75g/3oz dark chocolate

  • 50g/2oz butter

  • 1 tablespoon brandy

  • 300ml/1/2pt whipping cream (whipped until stiff)


Method:

  1. Boil the rice in unsalted water for 15 minutes, then drain.

  2. Put the rice into the milk with the 50g/2oz caster sugar, bring to the boil and simmer for a further 10 minutes.

  3. Remove from the heat and spoon a couple of tablespoonfuls of the mixture into a bowl with the egg yolks. Stir and return to the pan.

  4. Add the double cream, stir together, turn into a serving dish and chill for at least 1 hour.

  5. In a heatproof bowl set over a pan of simmering water, melt the dark chocolate with the butter, extra tablespoon of caster sugar and the brandy.

  6. Pour the mixture over the chilled rice pudding. Finish by piling whipped cream on top.
