Ingredients

100g/4oz
short-grain rice

600ml/1 pint coconut milk
-
300ml/1/2 pt
milk
-
50g/2oz caster
sugar
-
1 teaspoon butter
(plus extra for greasing)
Method:
-
Lightly grease a 1.2
liter/2pt shallow ovenproof dish.
-
Mix the rice with
the coconut milk, milk and sugar until all the
ingredients are well blended.
-
Pour the rice mixture
into the prepared dish and dot the surface with a
little butter.

Bake in the oven for about 30 minutes.
