Puddings Recipes - Baked Coconut Rice Pudding Recipe

Ingredients

SERVES 4-6

  • 100g/4oz short-grain rice

  • 600ml/1 pint coconut milk

  • 300ml/1/2 pt milk

  • 50g/2oz caster sugar

  • 1 teaspoon butter (plus extra for greasing)


Method:

  1. Lightly grease a 1.2 liter/2pt shallow ovenproof dish.

  2. Mix the rice with the  coconut milk, milk and sugar until all the ingredients are well blended.

  3. Pour the rice mixture into the prepared dish and dot the surface with a little butter.

  4. Bake in the oven for about 30 minutes.
