Puddings Recipes - Apple Tapioca Pudding Recipe

Ingredients

SERVES 6

  • 75g/3oz tapioca

  • 500ml/16fl oz water

  • Pinch of salt

  • 450g/1lb apples (pared, quartered and cored)

  • 2 teaspoons lemon juice

  • Grated zest of 1/4 lemon

  • 150g/5oz granulated sugar


Method:

  1. Soak the tapioca in the water for 1 hour.

  2. Put it into a saucepan, with the salt and 2 teaspoons sugar, to cook. Stir frequently and allow it to cook until transparent.

  3. While the tapioca is cooking, put the prepared apples into a pan, sprinkle the lemon juice, lemon zest and remaining sugar over, and heat gently.

  4. Pour the tapioca over the apples and heat long enough for the tapioca and apples to boil up together.
