Method:
-
Soak the tapioca in
the water for 1 hour.

Put it into a saucepan, with
the salt and 2 teaspoons sugar, to cook. Stir
frequently and allow it to cook until transparent.

While the tapioca is cooking, put the prepared
apples into a pan, sprinkle the lemon juice, lemon
zest and remaining sugar over, and heat gently.
-
Pour
the tapioca over the apples and heat long enough for
the tapioca and apples to boil up together.
