2 Bramley cooking
apples (peeled, cored and sliced)
200g/7oz
strawberries (halved)
50g/2oz caster sugar
1 tablespoon
corn flour
Method:
Preheat the oven to 200°C/400°F/Gas mark 6.
Mix
together the flour and oats in a large bowl and
rub in the margarine evenly. Stir in just enough
cold water to bind the mixture to form a firm
dough.
Knead
lightly until smooth.
Roll out the pastry and use to line a 23cm/9in
loose-bottomed flan tin.
Trim the
edges, prick the base and line with aluminum
foil and baking beans. Bake the
pastry case for 10 minutes, remove the foil and
beans and bake for 10 to 15 minutes or until
golden brown.
Place the apples in a pan with the
strawberries, sugar and corn flour. Cover and
cook gently, stirring, until the fruit is just
tender. Spoon into the pastry case and
serve warm.
