Pastries Recipes - Plum Cobbler Recipe

Ingredients

SERVES 6-8

  • 700g/1 1/2lb red plums

  • 50g/2oz caster sugar

  • 1 tablespoon water 

For the topping:

  • 100g/4oz self-raising flour

  • 50g/2oz plain flour

  • 50g/2oz caster sugar

  • 100g/4oz butter (chopped, plus extra for greasing)

  • 1 egg

  • 125ml/4fl oz milk

  • Icing sugar for dusting


Method:

  1. Preheat the oven to 180°C/350°F/Gas mark 4. Lightly grease a 2.1litre/3 1/2pt ovenproof dish.

  2. Cut the plums into quarters, discarding the stones. Put the plums in a pan with the sugar and water. Stir over a low heat for 5 minutes, or until the sugar dissolves, and the fruit softens slightly.

  3. Spread the plum mixture into the prepared dish. Sift the flours into a bowl, add the sugar and stir.

  4. Rub in the butter with your fingertips until the mixture is fine and crumbly. Combine the egg and milk and whisk until smooth. Stir into the flour mixture.

  5. Place large spoonfuls of mixture on top of the plums. Bake for 30 to 40 minutes or until the top is golden and cooked through. Dust with icing sugar before serving.
