Pastries Recipes - Plum, Apple and Banana Scone Pie Recipe

Ingredients

SERVES 4

  • 450g/1lb plums (stoned and halved)

  • 1 Bramley apple (peeled, cored and diced)

  • 1 large banana (sliced)

  • 150ml/5fl oz water

  • 100g/4oz plain whole meal flour

  • 2 teaspoons baking powder

  • 25g/1oz raisins

  • 4 tablespoons low-fat natural yogurt


Method:

  1. Preheat the oven to 180°C/350°F/Gas mark 4.

  2. Mix the fruit in a saucepan. Pour in the water. Bring to simmering point and cook gently for 15 minutes or until the fruit is completely soft.

  3. Spoon the fruit mixture into a pie dish and level the surface. Mix the flour, baking powder and raisins in a bowl. Add the yogurt and mix to a very soft dough.

  4. Transfer the scone dough to a lightly floured surface and divide it into 6 to 8 portions, then pat into flattish scones. Cover the plum and apple mixture with the scones.

  5. Bake the pie for 40 minutes until the scones topping is cooked through. Serve the pie hot with natural yogurt, or leave it until cold.
