Jalousie Recipe
Ingredients
SERVES 4-6

25g/1oz butter
(plus extra for greasing)

50g/2oz brown sugar
-
450g/1lb apples
(peeled, cored and cubed)

1 teaspoon grated
lemon zest
-
1 tablespoon lemon
juice
-
1/4 teaspoon
nutmeg
-
1/4 teaspoon
cinnamon
-
25g/1oz sultanas
-
350g/12oz puff pastry
-
1 egg (lightly
beaten, to glaze)
Method:

Preheat the oven to 220°C/425°F/Gas mark 7.
Lightly grease a baking tray and line with
baking parchment.

Melt the butter and sugar in a
frying pan. Add the apples, lemon zest and lemon
juice. Cook over a medium heat for 10 minutes,
stirring occasionally, until the apples are
cooked and the mixture is dark and syrupy.

Stir
in the nutmeg, cinnamon and sultanas. Cool
completely. Cut the block of puff pastry in
half.

On a lightly floured surface, roll out one
half of the pastry to a 24 x 18cm/10 x 7in
rectangle. Spread the fruit mixture on , to the
pastry, leaving a 2.5cm/1in border.

Brush the
edges lightly with the beaten egg. Roll the
second half of the pastry on a lightly floured
surface to a 25 x 18cm/10 x 7in rectangle.

Using
a sharp knife, cut slashes in the pastry across
its width, leaving a 2cm/3/4in border around the
edge. Place over the fruit and press the edges
together.

Glaze the top with egg. Bake for 25 to
30 minutes, or until puffed and golden.
