Hot Plum Batter Recipe
Ingredients

Vegetable oil for
greasing

1 tablespoon
muscovado sugar

450g/1lb red plums
(quartered
-
1 teaspoon vanilla
essence
-
1 tablespoon muscovado
sugar
-
1 teaspoon vanilla essence
-
75g/3oz self-raising flour
-
2 egg whites
-
icing sugar to sprinkle
Method:

Preheat the oven to 220°C/425°F/Gas mark 7.
Lightly oil a wide, shallow ovenproof dish and
add the plums.

Pour the milk, milk powder,
sugar, vanilla essence, flour and egg whites
into a food processor. Process until smooth.

Pour the batter over the plums. Bake for 25 to
30 minutes, or until well risen and golden.
Sprinkle with icing sugar and serve immediately.
