Pastries Recipes - Hot Plum Batter Recipe

Ingredients

SERVES 4

  • Vegetable oil for greasing                                                 

  • 1 tablespoon muscovado sugar

  • 450g/1lb red plums (quartered                                           

  • 1 teaspoon vanilla essence

  • 1 tablespoon muscovado sugar

  • 1 teaspoon vanilla essence

  • 75g/3oz self-raising flour

  • 2 egg whites

  • icing sugar to sprinkle


Method:

  1. Preheat the oven to 220°C/425°F/Gas mark 7. Lightly oil a wide, shallow ovenproof dish and add the plums.

  2. Pour the milk, milk powder, sugar, vanilla essence, flour and egg whites into a food processor. Process until smooth.

  3. Pour the batter over the plums. Bake for 25 to 30 minutes, or until well risen and golden. Sprinkle with icing sugar and serve immediately.
