Pastries Recipes - Glazed Nectarine Tart Recipe

Ingredients

SERVES 6

  • 175g/6oz puff pastry

  • 25g/1oz butter (melted)

  • 575g/1 1/4lb nectarines (quartered, stoned and sliced)

  • 2 tablespoons apricot jam


Method:

  1. Preheat the oven to 230°C/450°F/Gas mark 8.

  2. Roll out the pastry thinly to a 28cm/11in round. Put on a non-stick baking sheet and prick well allover with a fork.

  3. Bake for 8 to 10 minutes, or until well browned and cooked through.

  4. Brush some of the melted butter over the pastry and arrange the fruit slices over, right to the edges of the pastry.

  5. Drizzle with the remaining butter and grill for 5 minutes or until the fruit is just tinged with color. Cool slightly.

  6. Warm the apricot jam with a little water and brush over the fruit to glaze.
