Cream Cheese Honey
Pie Recipe

For the
short crust pastry:

150g/5oz plain
flour
-
Pinch of salt

75g/3oz butter
(cubed)

25ml/1fl oz iced water
For the filling:
Method:

To make the short crust pastry, sift the flour
and salt together into a large mixing bowl.

Add
the cubes of butter. Rub the butter and flour
together with your fingertips until the mixture
has a coarse texture.

Stirring lightly with a
knife, sprinkle water over the dough until it
just begins to cohere.

Gather the dough together
into a ball, pressing it together with your
hands. Wrap in Clingfilm and chill for 30
minutes.

Preheat the oven to 190°C/375°F/Gas
mark 5. Spread the ball of dough into a 20cm/8in
pie tin, patting it into place with your
fingers.

To make the filling, beat the cream
cheese until smooth. Add the milk gradually,
then stir in the sugar, lemon zest, cinnamon,
honey and beaten eggs.

Pour this filling mixture
into the pastry case, stand the pie tin on a
baking tray
and cook in the centre of the oven for about 45
minutes, until the filling is set.
