Ice-cream Recipe

1 egg
1 egg
yolk
25g/1oz caster sugar
150g/5oz white chocolate (broken into
pieces)
300ml/1/2pt milk
150ml/1/4pt double cream
Method:
Beat the egg, egg
yolk and sugar into a heatproof bowl. Place the
chocolate in a bowl with 3 tablespoons milk and melt
over a pan of simmering water.
Heat the remaining
milk until almost boiling and pour on to the eggs,
whisking.
Place the bowl containing the eggs, milk
and sugar over a pan of simmering water and cook,
stirring, until the mixture thickens. Whisk in the
chocolate.
Remove from the heat, cover with a piece
of dampened baking parchment and leave until cold.
Whip the cream until just holding its shape and fold
into the custard. Transfer to a freezer container
and freeze the mixture for 1 to 2 hours until frozen
2.5cm/1in from the sides.
Scrape into a bowl and
beat until smooth. Scrape back into the freezer
container and freeze until firm.
