Desserts Recipes - Plum and Cardamom Fool Recipe

Ingredients

SERVES 4

  • 1 kg/2 1/4lb dessert plums (stoned and sliced)

  • 100g/4oz caster sugar

  • 4 cardamom pods (split, seeds removed and crushed)

  • 2 tablespoons fresh lemon juice

  • 150ml/1/4pt custard

  • 200ml/7fl oz Greek yogurt


Method:

  1. Remove 8 slices of plum for decoration and set aside. Put the remaining plums, sugar, cardamom seeds and lemon juice in a pan.

  2. Cover and bring to the boil, then simmer for 20 to 25 minutes or until plums are soft. Pour into a cold bowl and leave for 30 minutes.

  3. Lift the plums out of the bowl with a slotted spoon, reserving the juices. Puree in a blender or food processor and pour into a bowl.

  4. Boil the juices for 3 to 4 minutes, until reduced to 3 tablespoons, then stir into the plum puree with the custard and yogurt, until smooth.

  5. Spoon into 4 tumblers and chill for 2 hours. Decorate with reserved plum slices and serve.
