Desserts Recipes - Lychee and Elderflower Sorbet Recipe

Ingredients

SERVES 4

  • 175g/6oz caster sugar

  • 400ml/14fl oz water

  • 500g/1lb 2oz fresh lychees (peeled and stoned)

  • 1 tablespoon undiluted elderflower cordial


Method:

  1. Heat the sugar and water until the sugar has dissolved, then boil for 5 minutes and add the lychees. Lower the heat and simmer for 7 minutes. Remove from the heat and allow to cool.

  2. Puree the fruit and syrup. Place a sieve over a bowl and pour the puree into it. Press through with a spoon.

  3. Stir the elderflower cordial into the strained puree, then pour the mixture into a freezer container.

  4. Freeze for approximately 2 hours, until ice crystals start to form around the edge.

  5. Remove the sorbet from the freezer and process briefly in a blender or food processor to break up the crystals.

  6. Repeat this freezer/blender process twice more, then leave to freeze until firm. Transfer to the refrigerator 10 minutes before serving.
