Lychee and
Elderflower Sorbet Recipe
Ingredients

175g/6oz caster
sugar
400ml/14fl oz water
500g/1lb 2oz
fresh
lychees
(peeled and stoned)
1 tablespoon undiluted elderflower cordial
Method:
Heat the sugar and
water until the sugar has dissolved, then boil for 5
minutes and add the lychees. Lower the heat and
simmer for 7 minutes. Remove from the heat and allow
to cool.
Puree the fruit and syrup. Place a sieve
over a bowl and pour the puree into it. Press
through with a spoon.
Stir the elderflower cordial
into the strained puree, then pour the mixture into
a freezer container.
Freeze for approximately 2 hours, until ice crystals
start to form around the edge.
Remove the sorbet
from the freezer and process briefly in a blender or
food processor to break up the crystals.
Repeat this
freezer/blender process twice more, then leave to
freeze until firm.
Transfer to the refrigerator 10 minutes before
serving.
