Desserts Recipes - Lemon Cream with Summer Fruit Recipe

Ingredients

SERVES 6

  • 225g/8oz curd cheese

  • 75g/3oz icing sugar

  • 1 teaspoon finely grated lemon zest

  • 1 tablespoon lemon juice

  • 300ml/1/2pt double cream

  • 675g/1 1/4lb soft summer fruit (sliced strawberries, cherries, blackberries, raspberries, redcurrants and blackcurrants)

  • 2 tablespoons crème de cassis


Method:

  1. Beat together the curd cheese, icing sugar, lemon zest and juice. Whip the cream until it just holds its shape and fold into the cheese mixture.

  2. Line a sieve with muslin. Fill with the cream mixture and smooth the top. Set it over a bowl to catch the drips and leave to drain in the refrigerator overnight.

  3. Turn the cream on to a large plate and remove the muslin. Mix the summer fruit with the crème de cassis and spoon around the cream.
