Desserts Recipes - Frozen Egg Nog Recipe

Ingredients

SERVES 4

  • 2 egg yolks

  • 25g/1oz caster sugar

  • 2 tablespoons rum

  • 1 tablespoon brandy

  • 300ml/1/2pt double cream


Method:

  1. Place the egg yolks, sugar, rum and brandy in a bowl over a pan of simmering water and whisk until the mixture is thick and creamy.

  2. Remove from the heat and continue whisking until the mixture has cooled slightly. Then transfer to a freezer container.

  3. Whip the cream until it stands in soft peaks and then fold carefully into the egg mixture. Freeze for at least 4 hours.
