Desserts Recipes - Brazilian Coffee Banana Recipe

Ingredients

SERVES 6

  • 4 bananas

  • 1 tablespoon instant coffee granules

  • 1 tablespoon hot water

  • 25g/1oz dark muscovado sugar

  • 250ml/9fl oz Greek yogurt

  • 2 teaspoons flaked almonds (toasted)


Method:

  1. Peel and slice 1 banana and set aside. Peel and mash the remaining 3 with a fork in a large mixing bowl.

  2. Dissolve the coffee in the hot water and stir into the mashed bananas. Spoon a little of the mashed banana mixture into 4 serving dishes and sprinkle each with sugar.

  3. Top with a spoonful of yogurt, then repeat the layers until the ingredients are all used up.

  4. Finish with banana slices and flaked almonds. Refrigerate for 30 minutes, then serve.
