Desserts Recipes - Apricot and Orange Jellies Recipe

Ingredients

SERVES 4

  • 225g/8oz ready-to-eat dried apricots

  • 300ml/1/2pt unsweetened orange juice

  • 2 tablespoons lemon juice

  • 3 teaspoon clear honey

  • 1 tablespoon powdered gelatin

  • 4 tablespoons boiling water


Method:

  1. Place the apricots in a saucepan and pour in the orange juice.

  2. Bring to the boil, cover and simmer for 15 to 20 minutes, until the apricots are plump and soft. Leave to cool for 10 minutes.

  3. Transfer the mixture to a blender or food processor and blend until smooth. Stir in the lemon juice and add the honey.

  4. Pour the mixture into a measuring jug and make up to 600ml/1 pt with cold water.

  5. Dissolve the gelatin in the boiling water and pour into the apricot mixture.

  6. Pour the mixture into 4 individual 150ml/1/4pt moulds. Leave to chill until set.
