Fresh Fruit Desserts Recipes - Port Fruit Salad Recipe

Ingredients

SERVES 4

  • 300ml/1/2pt water

  • 100g/4oz caster sugar

  • 1 cinnamon stick

  • 4 cloves

  • Pared zest of 1 orange

  • 300ml/1/2pt port

  • 2 oranges

  • 1 small honeydew melon

  • 4 small bananas

  • 2 dessert apples

  • 225g/8oz seedless grapesa


Method:

  1. Put the water, sugar, spices and orange zest into a pan and stir over a gentle heat to dissolve the sugar.

  2. Bring to the boil, lower the heat, cover and simmer for 10 minutes. Leave to cool, then add the port.

  3. Strain the liquid into a bowl. With a sharp knife, cut off all the skin and pith from the oranges.

  4. Then, holding each orange over the bowl to catch the juice, cut it into segments, allowing them to drop into the syrup. Squeeze the remaining pulp to catch any juice.

  5. Cut the melon in half, remove the, seeds and scoop out the flesh. Add to the syrup.

  6. Peel the bananas and cut them diagonally In 1 cm/1/2in slices. Quarter and core the apples and cut the wedges into small cubes.

  7. Halve the grapes if large. Stir all the fruit into the syrup, cover with Clingfilm and chill for 1 hour before serving.
