Papaya Skewers
with Passion Fruit Recipe
Ingredients

3 papayas
-
10 small passion
fruit
-
2 tablespoons lime juice
-
25g/1oz icing
sugar
-
2 tablespoons
white rum
Method:

Cut the papayas in
half and scoop out the seeds. Peel and cut the flesh
into even-sized chunks. Thread the chunks on to 6
bamboo skewers.

Halve 8 of the passion fruit and
scoop out the insides. Puree for a few seconds in a
blender or food processor.

Press the passion fruit
pulp through a sieve and discard the seeds. Add the
lime juice, icing sugar and rum, then stir the coulis well until the sugar has dissolved.

Spoon a little of the
coulis on to 6 serving plates. Place the skewers on
top.

Scoop the flesh from the remaining passion
fruit and spoon it over.
