Fresh Fruit Desserts Recipes - Indian Fruit Salad Recipe

Ingredients

SERVES 4

For the sauce:

  • 50g/2oz cashew nuts

  • 50g/2oz almonds

  • 50g/2oz pistachio nuts

  • 75g/3oz granulated sugar

  • 125ml/4fl oz single cream

For the fruit salad:

  • 1 mango (peeled and diced)

  • 1/2 pineapple (peeled and diced)

  • 2 bananas (peeled and finely sliced)

  • 2 apples (peeled and diced)

  • 2 cheekoo (peeled and diced)

  • 1 kiwi fruit (peeled and finely sliced)

  • 1 small guava (peeled and diced)

  • B white grapes (halved)

  • Seeds and flesh of 1 passion fruit

  • Juice of 1 lime

  • 2 tablespoons chopped mixed nuts


Method:

  1. Place the ingredients for the sauce into a blender or food processor for 2 to 3 minutes or until smooth.

  2. Transfer the mixture to a small saucepan and heat for 5 to 7 minutes over a medium heat, stirring slowly. Remove from the heat and set aside.

  3. To make the fruit salad, place the prepared fruit in a large bowl and pour the lime juice over.

  4. Mix well, then pour the sauce over the fruit or serve on the side. Sprinkle the salad with chopped nuts.
