Gooseberry Cheese
Cooler Recipe
Ingredients

500g/1lb 2oz fresh
gooseberries
Finely grated zest and
juice of 1 small orange
1 tablespoon clear honey
250g/9oz cottage cheese
Method:
Top and tail the
gooseberries and place them in a pan. Add the
orange zest and
juice to the pan and cook gently, stirring
occasionally, until the fruit is tender.
Remove from the heat and
stir in the honey. Puree the gooseberries with
their juice in a blender or food processor until
almost smooth. Then allow to cool.
Press the cottage cheese
through a sieve until smooth. Stir half the
cooled gooseberry puree into the cheese.
Spoon the cheese mixture
into 4 serving glasses. Top each with gooseberry
puree. Serve chilled.
