Fresh Fruit Desserts Recipes - Fruit Canapés Recipe

Ingredients

SERVES 4

  • 350g/12oz puff pastry

  • 225g/8oz white almond paste

  • 2 tablespoons apricot jam

  • 1 small mango

  • 2 kiwi fruit, sliced

  • 225g/8oz strawberries, sliced

  • 1 star fruit, sliced

  • 20 seedless black grapes

  • 3 tangerines, segmented

  • 1 tablespoon powdered gelatin

  • 25g/1oz caster sugar

  • 300ml/1/2pt water


Method:

  1. Preheat the oven to 220°C/425°F/Gas mark 7. Roll out the pastry very thinly and stamp out about 30 6cm/2 1/4in rounds.

  2. Prick each with a fork and bake for 8 to 10 minutes until crisp. Leave to cool.

  3. Roll out the almond paste and cut out an equal number of rounds, slightly smaller than the pastry. Stick on top of the pastry using the apricot jam.

  4. Slice through the mango and remove small balls with a melon baler. Use a variety of fruits to decorate the pastries.

  5. Dissolve the gelatin and sugar in the water to make a glaze. Brush over the fruits, chill for 30 minutes, then serve.
