Fresh Fruit Desserts Recipes - Fresh Fruit with Caramel Rice Recipe

Ingredients

SERVES 4

  • 50g/2oz short-grain rice

  • Butter for greasing

  • 75g/3oz demerara sugar

  • Pinch of salt

  • 400g/14oz canned evaporated milk (made up to 600ml/1pt with water)

  • 2 apples

  • 1 small pineapple

  • 2 teaspoons lemon juice


Method:

  1. Preheat the oven to 150°C/300°F/Gas mark 2. Wash the rice under cold water. Drain well and place into a large greased soufflé dish.

  2. Add 2 tablespoons sugar to the dish with the salt. Pour on the diluted evaporated milk and stir gently. Bake for 2 hours, then leave to cool for 30 minutes.

  3. Meanwhile, peel, core and cut the apples and pineapple into thin slices, then cut the pineapple into chunks.

  4. Toss the fruit in lemon juice, coating thoroughly, then set aside.

  5. Preheat the grill and sprinkle the remaining sugar over the rice. Grill for 5 minutes to caramelize the sugar. Leave to stand for 5 minutes, then serve with the fresh fruit.
