Fresh Fruit Desserts Recipes - Coffee and Peach Creams Recipe

Ingredients

SERVES 4

  • 4 peaches (halved and stoned)

  • 50g/2oz caster sugar

  • 50ml/2fl oz water

  • 2 tablespoons coffee essence

  • 200ml/7fl oz Greek yogurt

  • 300ml/1/2pt custard


Method:

  1. Place the peaches in a large bowl, cover with boiling water and leave for 2 to 3 minutes. Drain the peaches, then carefully remove the skins.

  2. Place the caster sugar in a saucepan and add the water. Bring to the boil, stirring occasionally, until the sugar has dissolved. Boil rapidly for about 2 minutes.

  3. Add the peaches and coffee essence to the pan. Remove from the heat and allow to cool.

  4. Mix together the yogurt and custard until well combined. Divide the peaches between 4 glass dishes.

  5. Spoon over the custard mixture then top with the remaining peach juices. Chill for 30 minutes, then serve.
