Fresh Fruit Desserts Recipes - Clementines in Cinnamon Caramel Recipe

Ingredients

SERVES 4

  • 450g/1lb clementines

  • 225g/8oz granulated sugar

  • 300ml/1/2pt warm water

  • 2 cinnamon sticks

  • 2 tablespoons orange-flavored liqueur

  • 25g/1oz shelled, unsalted pistachio nuts


Method:

  1. Pare the zest from 2 clementines and cut it into fine strips.

  2. Peel the clementines, removing all the pith but keeping each fruit intact. Put the fruits in a heatproof serving bowl.

  3. Gently heat the sugar in a pan until it dissolves and turns a rich golden brown. Immediately turn off the heat.

  4. Protecting your hand with an oven glove or tea towel, carefully pour in the warm water. Bring slowly to the boil, stirring until all the caramel is dissolved.

  5. Add the shredded zest and cinnamon sticks, then simmer for 5 minutes. Stir in the liqueur.

  6. Leave the syrup to cool for about 10 minutes, then pour it over the clementines.

  7. Cover the bowl, cool, then chill for several hours or overnight. Blanch the pistachio nuts in boiling water. Drain, cool and remove the outer skins.

  8. Scatter the nuts over the clementines and serve at once.
