Ingredients

Pinch of mixed
spice

1 star anise
-
2.5cm/1in fresh
root ginger (peeled and sliced)

50g/2oz unsalted
cashew nuts
-
2 kiwi fruits
(peeled, halved and sliced)
-
1 star fruit
(sliced)
-
100g/4oz
strawberries (hulled and sliced)
-
400g/14oz canned lychees in syrup (drained)
-
2.5cm/1in stem
ginger (drained and sliced)
Method:
-
Put the Chinese rice wine, lemon zest and juice
and water in a saucepan.

Add the caster sugar,
cloves, cinnamon stick, vanilla pod, mixed spice,
star anise and root ginger to the saucepan.

Heat the mixture in
the pan gently, stirring constantly, until the sugar
has dissolved and then bring to the boil. Reduce the
heat and simmer for 5 minutes. Set aside to cool
completely.

Strain the syrup, discarding the
flavorings. Stir in the cashew nuts, cover with
Clingfilm and chill in the refrigerator while
preparing the fruits.

Spoon the prepared fruit into
a dish with the lychees and ginger. Stir through
gently to mix. Pour the syrup over the fruit and
serve.
