Fresh Fruit Desserts Recipes - Baked Peaches with Raspberry Sauce Recipe

Ingredients

SERVES 6

  • 25g/1oz buffer

  • 50g/2oz granulated sugar

  • 1 egg (beaten)

  • 25g/1oz ground almonds

  • 6 ripe peaches

For the sauce:

  • 225g/8oz raspberries

  • 1 tablespoon icing sugar


Method:

  1. Preheat the oven to 180°C/350°F/Gas mark 4. Beat the butter and sugar together, then beat in the egg and ground almonds.

  2. Cut the peaches in half and remove the stones. With a spoon scrape out some of the flesh, slightly enlarging the hole left by the stone. Save the excess flesh for the sauce.

  3. Stand the peach halves on a baking tray flesh-side up, supporting them with crumpled aluminum foil to keep them steady.

  4. Fill the hollow in each peach half with the almond mixture. Bake for 30 minutes.

  5. To make the sauce, combine the raspberries and icing sugar in a blender or food processor. Add the reserved peach flesh and process until smooth. Press through a sieve.

  6. Let the peaches cool slightly. Spoon the sauce on each plate and arrange 2 peach halves on top. Serve immediately.
