Fresh Fruit Desserts Recipes - Baked Apples in Red Wine Recipe

Ingredients

SERVES 6

  • 50g/2oz sultanas

  • 350ml/12fl oz red wine

  • Pinch of ground nutmeg

  • Pinch of ground cinnamon

  • 50g/2oz granulated sugar

  • Pinch of grated lemon zest

  • 25g/1oz butter

  • 6 cooking apples


Method:

  1. Put the sultanas in a small bowl and pour the wine over them. Stir in the nutmeg, cinnamon, sugar and lemon zest. Cover and leave to stand for approximately 1 hour. 

  2. Preheat the oven to 190°C/375°F/Gas mark 5. Use a little of the butter to grease a baking dish.

  3. Core the apples, without cutting right through to the bottom. Divide the sultana mixture among the apples.

  4. Spoon in a little extra spiced wine. Arrange the apples in the prepared baking dish. 

  5. Pour the remaining wine around the apples. Top the filling in each apple with 1 teaspoon of the remaining butter.

  6. Bake for 40 to 50 minutes, or until the apples are soft but not mushy. Serve hot.
