Baked Apples in
Red Wine Recipe
Ingredients

50g/2oz sultanas
350ml/12fl oz red wine
Pinch
of ground nutmeg
Pinch of ground cinnamon
50g/2oz granulated
sugar
Pinch of grated lemon zest
25g/1oz butter
6 cooking apples
Method:
Put the sultanas in a
small bowl and pour the wine over them. Stir in the nutmeg,
cinnamon, sugar and lemon zest. Cover and leave to
stand for approximately
1 hour.
Preheat the oven to 190°C/375°F/Gas
mark 5. Use a little of the butter to grease
a baking dish.
Core the apples, without cutting
right through to the bottom. Divide the sultana
mixture among the apples.
Spoon in a little extra
spiced wine. Arrange the apples in the prepared
baking dish.
Pour
the remaining wine around the apples. Top the
filling in each apple with 1 teaspoon of the
remaining butter.
Bake for 40 to 50 minutes, or
until the apples are soft but not mushy. Serve hot.
