Ingredients
Serves 4

25g/1oz margarine
(plus extra for greasing)

25g/1oz brown
sugar
-
2 eggs
-
50g/2oz plain
flour
-
3/4 teaspoon
baking powder
-
1 75ml/6fl oz milk
-
1 teaspoon coffee
essence
For the sauce:
-
300ml/1/2 pt milk
-
1 tablespoon brown
sugar
-
1 teaspoon cocoa powder
-
2 tablespoons corn flour
-
4 tablespoons cold water
Method:

Lightly grease a 600ml/ 1 pt pudding basin.
Cream the margarine and sugar until light and
fluffy. Then beat in the eggs.

Gradually stir in the flour and baking powder
and then the milk and coffee essence to make a
smooth batter.

Spoon the mixture into the
prepared pudding basin and cover with a pleated
piece of baking parchment and then a pleated
piece of foil, securing around the bowl with a
string.

Place in a steamer or large pan and half
fill with boiling water. Cover and steam for 1
to 1 1/4 hours, or until cooked through.

To make
the sauce, put the milk, sugar and cocoa powder
in a pan and heat, stirring constantly, until
the sugar dissolves.

Blend the corn flour with
the water to make a smooth paste and stir into
the pan. Bring to the boil, stirring constantly,
until thickened. Cook over a gentle heat for 1
minute.

Turn the pudding out on to a warm plate
and spoon the sauce over the top. Serve
immediately.
