Desserts Recipes - Spiced Date Walnut Cake Recipe

Ingredients

Serves 8

Butter for greasing

  • 300g/11 oz whole meal self-raising flour

  • 2 teaspoons mixed spice

  • 150g/5oz dates (chopped)

  • 50g/2oz walnuts (chopped)

  • 4 tablespoons sunflower oil

  • 100g/4oz dark muscovado sugar

  • 300ml/1/2pt skimmed milk


Method:

  1. Preheat the oven to 180°C/350°F/Gas mark 4. Grease and line a 900g/2lb loaf tin with baking parchment.

  2. Sift together the flour and spice, adding back any bran from the sieve. Stir in the dates and walnuts.

  3. Mix the oil, sugar and milk, then stir evenly into the dry ingredients. Spoon into the prepared tin.

  4. Bake in the oven for 40 to 45 minutes, or until golden brown and firm. Turn out the cake, remove the lining paper and leave to cool on a wire rack.
