Desserts Recipes - Slab Cake Recipe

Ingredients

Serves 8   

  • 350g/12oz sultanas

  • 100g/4oz Morello cherries

  • 150g/5oz candied orange and lemon peel

  • 100g/4oz chopped almonds

  • Grated zest of 1 orange

  • Grated zest of 1 lemon

  • 500g/1lb 2oz butter (softened)

  • 500g/1lb 2oz caster sugar

  • 9 eggs

  • 850g/1lb 14oz plain white flour

  • 2 teaspoons baking powder

  • 1 teaspoon milk


Method:

  1. Preheat the oven to 160°C/325°F/Gas mark 3. Line the base and sides of a rectangular 25 x 35cm/10 x 14in cake tin with baking parchment.

  2. Mix the fruit, peel and almonds with the grated orange and lemon zest.

  3. In another bowl cream the butter well, add the caster sugar and continue to beat until light and pale.

  4. Whisk the eggs and beat in bit by bit, adding a little flour if the mixture shows signs of curdling.

  5. Stir in the flour and baking powder and finally the mixture of fruit and almonds. If it appears too stiff, add a little milk.

  6. Pour into the tin and bake in the oven for 1 1/2 to 1 3/4 hours. Cool in the tin.
