Desserts Recipes - Seed Cake Recipe

Ingredients

Serves 6-8

  • 100g/4oz butter

  • 150g/5oz caster sugar

  • 2 eggs

  • 150g/5oz flour (sifted)

  • 25g/1oz corn flour

  • 2 teaspoons caraway seeds

  • 1/2 teaspoon baking powder

  • 50g/2oz glace cherries (finely chopped)

  • 1/2 teaspoon vanilla essence


Method:

  1. Preheat the oven to 170°C/325°F/Gas mark 3. Grease a 20cm/8in round cake tin and line with baking parchment.

  2. Beat the butler and sugar together until white, then add each egg separately.

  3. Gradually stir in the flour, corn flour, caraway seeds, baking powder, cherries and vanilla essence.

  4. Pour the mixture into the prepared cake tin and bake in the oven for 1 1/4 hours. Turn on to a wire rack to cool.
