Ingredients
Serves 6-8

100g/4oz butter
-
150g/5oz caster sugar
-
2 eggs
-
150g/5oz flour
(sifted)
-
25g/1oz corn flour
-
2 teaspoons
caraway seeds
-
1/2 teaspoon
baking powder
-
50g/2oz glace
cherries (finely chopped)
-
1/2 teaspoon vanilla essence
Method:

Preheat the oven to 170°C/325°F/Gas mark 3.
Grease a 20cm/8in round cake tin and line with
baking parchment.

Beat the butler and sugar
together until white, then add each egg
separately.
-
Gradually stir in the flour, corn flour, caraway seeds, baking powder,
cherries and vanilla essence.

Pour the mixture
into the prepared cake tin and bake in the oven
for 1 1/4 hours. Turn on to a wire rack to cool.
