Desserts Recipes - Rock Cakes Bake Recipe

Ingredients

Serves 10

  • 75g/3oz butter (cubed, plus extra for greasing)

  • 225g/8oz self-raising flour

  • 100g/4oz caster sugar

  • 75g/3oz mixed dried fruit

  • 1/2 teaspoon ground ginger

  • 1 egg

  • 50ml/2fl oz milk


Method:

  1. Preheat the oven to 200°C/400°F/Gas mark 6. Grease 2 baking trays.

  2. Sift the flour into a large bowl and rub in the butter with your fingertips until the mixture resembles fine breadcrumbs.

  3. Stir in the sugar, fruit and ginger. Whisk the egg into the milk in a bowl, add the dry ingredients and mix to a stiff dough.

  4. Drop rough heaps of mixture, about 3 tablespoons at a time, on to the trays. Bake for 10 to 15 minutes, or until golden. Cool on a wire rack.
