75g/3oz butter
(cubed, plus extra for greasing)

225g/8oz self-raising flour
-
100g/4oz caster sugar
-
75g/3oz mixed
dried fruit

1/2 teaspoon ground ginger
-
1 egg
-
50ml/2fl oz milk
Method:

Preheat the oven to 200°C/400°F/Gas mark 6.
Grease 2 baking trays.

Sift the flour into a large bowl and rub in the
butter with your fingertips until the mixture resembles fine breadcrumbs.

Stir in
the sugar, fruit and ginger. Whisk the egg into
the milk in a bowl, add the dry ingredients and
mix to a stiff dough.

Drop rough heaps of
mixture, about 3 tablespoons at a time, on to
the trays. Bake for 10 to 15 minutes, or until
golden. Cool on a wire rack.
