Desserts Recipes - Potato Apple Cake Recipe

Ingredients

Serves 2   

  • 450g/1lb cooked potatoes (mashed)

  • 100g/4oz plain white flour

  • 1/2 teaspoon salt

  • 1-2 Bramley apples (peeled, cored and sliced)

  • 25g/1oz butter (plus extra for basting)

  • Sprinkling of caster sugar


Method:

  1. Mix together the potatoes, flour and salt. Roll the potato mixture into a round about 2cm/1in thick.

  2. Divide into 4 and put a couple of layers of apple on top of two of the Sections, then sandwich the other two sections on top. Pinch around the edges to seal.

  3. Place a non-stick frying pan over a medium heat and melt the butter. Cook the cake on both sides for about 20 minutes, until the cake is brown on both sides.

  4. Remove the top sections and brush the apple with butter and sprinkle with sugar.

  5. Replace the tops and return to the pan until the butter has melted. Remove carefully to warm plates and serve immediately.
