Desserts Recipes - Polish Honey Cake Recipe

Ingredients

Serves 8   

  • 500g/1lb 2oz honey

  • 500g/1lb 2oz caster sugar

  • 250g/9oz butter

  • 900g/2lb self-raising flour

  • 3 eggs

  • 3 teaspoons bicarbonate of soda (dissolved in 125ml/4fl oz milk)

  • 1/2 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground ginger

  • 1 teaspoon ground cardamom

  • 25g/1oz pecan nuts (chopped)


Method:

  1. Gradually heat the honey, sugar and butter together almost to boiling point. Allow to cool.

  2. Working the dough with your hands, gradually add the flour, eggs, bicarbonate of soda  and milk, salt and spices. Add the pecan nuts.

  3. Shape the dough into a ball, put it in a bowl and cover with a tea towel. Leave in a cool place overnight to mature.

  4. The next day, preheat the oven to 180°C/350°F/Gas mark 4. Divide the dough into 3 parts, roll them out and place each piece in a 20cm/8in baking tin.

  5. Bake in the oven for 40 minutes or until the cakes are slightly browned and firm to the touch.
