Orange Cake Recipe
Ingredients
Serves 8

225g/8oz
self-raising flour
-
50g/2oz custard
powder
-
300g/11oz caster
sugar

75g/3oz butter
(chopped and softened, plus extra for greasing)

3 eggs
-
2 teaspoons finely
grated orange zest
-
225ml/8fl oz orange juice
For the orange butter
cream:
-
75g/3oz icing sugar
-
100g/4oz butter
(softened)
-
1 tablespoon
orange juice
-
1 teaspoon finely
grated orange zest
Method:

Preheat the oven to 180°C/350°F/Gas mark 4.
Lightly grease a 23cm/9in round
cake tin and line the base with baking
parchment.

Sift the flour and custard powder into a large
bowl and add the sugar, butter,
eggs, orange zest and juice. Beat with an
electric beater for 4 minutes or until
the mixture is smooth.

Spoon the mixture into the tin and smooth the
surface. Bake for 50 minutes, or until a skewer
comes out clean when inserted into the centre of
the cake.

Leave the cake in the tin for 5
minutes before turning out on to a wire rack to
cool.

For the orange butter cream, beat all the
ingredients in a small bowl with an
electric beater until smooth and creamy. Spread
evenly over the cooled cake.
