Desserts Recipes - Norwegian Apple Cake Recipe

Ingredients

Serves 12

  • 4 large Bramley apples

  • Juice of 1/2 lemon

  • 3 eggs

  • 250g/9oz caster sugar

  • 150g/5oz butter (plus more for greasing)

  • 200ml/7fl oz single cream

  • 200g/7oz plain flour (plus more for dusting)

  • 3 teaspoons baking powder


Method:

  1. Preheat the oven to 200°C/400°F/Gas mark 6. Butter a 30 x 20cm/12 x 8in roasting tin, dust with flour and set aside.

  2. Peel and core the apples, cut into slices and sprinkle with the lemon juice. Whisk the eggs with 225g/8oz sugar until the mixture creams and thickens.

  3. Put the butter with the cream in a pan and bring to the boil. Pour this into the egg mixture while whisking.

  4. Sift in the flour and baking powder and fold in carefully with the whisk to make sure there are no lumps.

  5. Pour this batter into the prepared tin, then arrange the apple slices overlapping on the top.

  6. Sprinkle the remaining caster sugar over the top and bake for 25 minutes, when it is golden brown around the edges. Leave to cool in the tin.
