Desserts Recipes - Molasses Cake Recipe

Ingredients

Serves 8-10

  • 1.1 kg/2 1/2lb plain flour

  • 250g/9oz butter (plus extra for greasing)

  • 250g/9oz sugar

  • 2 teaspoons ground ginger

  • 1 tablespoon bicarbonate of soda

  • 3 tablespoons warm water

  • 225ml/8fl oz sour milk

  • 450g/1lb molasses


Method:

  1. Preheat the oven to 190°C/375°F/Gas mark 5. Grease a 23cm/9in cake tin.

  2. Put the flour in a large basin and rub in the butter until the mixture is quite smooth, then mix in the sugar and the ginger.

  3. Dissolve the bicarbonate of soda in the warm water and stir the sour milk and molasses.

  4. Add to the mixture to make a fairly sticky dough. Work the dough thoroughly.

  5. Place in the prepared cake tin and bake in the oven for 50 minutes. Leave to cool in the tin for 30 minutes.
