Desserts Recipes - Fudge-Mint Torte Recipe

Ingredients

Serves 10

  • 275g/10oz cooking chocolate (broken into small pieces)

  • 225g/8oz butter (chopped, plus extra for greasing)

  • 350g/12oz demerara sugar

  • 4 eggs

  • 350g/12oz plain flour (sifted)

For the filling:

  • 450ml/3/4pt double cream

  • 50ml/2fl oz Crème de Menthe liqueur

  • 2 tablespoons icing sugar


Method:

  1. Preheat the oven to 180°C/350°F/Gas mark 4. Grease 3 x 20cm/8in round cake tins and line with baking parchment.

  2. In a small saucepan, combine the chocolate and butter. Stir over a very low heat just until melted and combined.

  3. Remove from the heat. Transfer the chocolate mixture to a large mixing bowl and beat in the demerara sugar.

  4. Beat in the eggs, one at a time, until combined, then beat in the flour until well blended. Divide the batter evenly into the tins.

  5. Bake in the oven for 25 minutes. Cool in the tins for 10 minutes, then turn out on to wire racks. Peel off the paper and allow to cool completely.

  6. In a medium-sized bowl, beat together the cream, Crème de Menthe and icing sugar until stiff.

  7. Stack and fill cake layers on a serving plate, using a third of the filling between each layer and on the top.
