Date Ginger Cake Recipe
Ingredients
Serves 8

1/2 teaspoon
bicarbonate of soda

50ml/2fl oz milk
-
100g/4oz butter
(plus extra for greasing)

100g/4oz muscovado
sugar
-
2 large eggs, beaten
-
150g/5oz golden
syrup
-
150g/5oz treacle
-
100g/4oz stoned
dates (roughly chopped)

50g/2oz stem
ginger in syrup (roughly chopped)
-
225g/8oz plain
flour (sifted)

1 1/2 teaspoon
ground ginger
-
Pinch of salt
Method:
-
Preheat the oven
to 150°C/300°F/Gas mark 2. Grease a 3cm/9in
square cake tin and line with baking parchment.

Stir the bicarbonate of soda into the milk. Beat together the
butter and sugar until pale and light.
-
Slowly
add the eggs and then stir in the syrup,
treacle, milk, dates and stem ginger. Fold in
the flour, ground ginger and salt.

Pour into the
tin and bake for 1 hour, or until a skewer
inserted into the middle comes out clean.

Leave
in the tin for 1
hour, then turn out on to a wire rack to cool
completely.
