Desserts Recipes - Caramel Apple Sauce Cake Recipe

Ingredients

Serves 8-10

  • 50g/2oz butter

  • 150g/5oz demerara sugar

  • 150ml/1/4pt apple sauce

  • 2 eggs

  • 225g/8oz flour

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 3/4 teaspoon baking powder

  • 1/4 teaspoon salt

  • 100g/4oz raisins

  • 100g/4oz chopped pecan nuts


Method:

  1. Preheat the oven to 180°C/350°F/Gas mark 4. Grease a 20cm/8in square baking tin.

  2. Melt the butter and sugar in a medium-sized saucepan. Remove from the heat and stir in the apple sauce.

  3. Whisk in the eggs until well blended. In a mixing bowl, stir or sift together the flour, cinnamon, nutmeg, baking powder and salt.

  4. Stir in the raisins and pecan nuts. Add the dry ingredients to the saucepan and stir or whisk until just blended.

  5. Pour the batter into the tin and bake in the centre of the oven for 25 minutes until the top springs back when lightly touched.

  6. Leave to cool in the tin on a wire rack for at least 10 minutes before cutting into squares.
