Preheat the oven to 200°C/400°F/Gas mark 6.
Lightly grease a 12-hole muffin tin.

Place the
apple sauce in a bowl and break up with a knife.

Sift the flour and cinnamon into a separate bowl
and add the sugar. Make a well
in the centre.

Whisk together the milk, eggs and
vanilla essence in a jug and pour into the well.
Add the melted butter.

Fold the mixture gently with a wooden spoon
until just combined. Add the apple
sauce and gently stir through. Do not over mix -
the batter should be lumpy.

Fill each muffin hole in the tray with the
mixture. Bake for 20 to 25 minutes.

Allow to
cool in the tray for a few minutes before
removing.
