Desserts Recipes - Apple Cinnamon Muffins Recipe

Ingredients

Serves 6-12

  • 400g/14oz apple sauce

  • 275g/ 10oz self-raising flour

  • 2 teaspoon ground cinnamon

  • 100g/4oz demerara sugar

  • 350ml/12fl oz milk

  • 2 eggs

  • 1 teaspoon vanilla essence

  • 150g/5oz butter (melted, then cooled)

  • 50g/2oz walnuts (finely chopped)


Method:

  1. Preheat the oven to 200°C/400°F/Gas mark 6. Lightly grease a 12-hole muffin tin.

  2. Place the apple sauce in a bowl and break up with a knife.

  3. Sift the flour and cinnamon into a separate bowl and add the sugar. Make a well in the centre.

  4. Whisk together the milk, eggs and vanilla essence in a jug and pour into the well. Add the melted butter.

  5. Fold the mixture gently with a wooden spoon until just combined. Add the apple sauce and gently stir through. Do not over mix - the batter should be lumpy.

  6. Fill each muffin hole in the tray with the mixture. Bake for 20 to 25 minutes.

  7. Allow to cool in the tray for a few minutes before removing.
