Desserts Recipes - White Chocolate Florentines Recipe

Ingredients

SERVES 12

  • 200g/7oz butter

  • 225g/8oz caster sugar

  • 100g/4oz walnuts (chopped)

  • 100g/4oz almonds (chopped)

  • 50g/2oz sultanas (chopped)

  • 25g/1oz glace cherries

  • 25g/1oz mixed candied peel (chopped finely)

  • 2 tablespoons single cream

  • 225g/8oz white chocolate


Method:

  1. Preheat the oven to 180°C/350°F/Gas mark 4. Line 4 baking trays with non­stick baking parchment.

  2. Melt the butter over a low heat and then add the sugar, stirring until it has dissolved. Boil the mixture for exactly 1 minute, then remove from the heat.

  3. Add the walnuts, almonds, sultanas, glace cherries, candied peel and cream to the saucepan, stirring well to mix.

  4. Drop heaped teaspoonfuls of the mixture on to the baking trays, allowing plenty of room for them to spread while cooking. Bake in the oven for 10 minutes, or until golden brown.

  5. Remove the biscuits from the oven and neaten the edges with a knife while they are still warm. Leave to cool slightly, and then transfer them to a wire rack to cool completely.

  6. Melt the chocolate in a heatproof bowl set over a pan of gently simmering water. Spread the underside of the biscuits with chocolate and leave to set.
