Desserts Recipes - Peanut - Frosted Brownies Recipe

Ingredients

SERVES 8

  • 225g/8oz plain flour

  • 100g/4oz cocoa powder

  • 1/2 teaspoon baking powder

  • Pinch of salt

  • 100g/4oz butter (softened)

  • 350g/12oz brown sugar

  • 3 eggs

  • 1 teaspoon vanilla essence

  • 225g/8oz unsalted peanuts

For the peanut frosting:

  • 50g/2oz butter

  • 225g/8oz icing sugar (sifted)

  • 2 tablespoons smooth peanut butter

  • 1 tablespoon boiling water


Method:

  1. Preheat the oven to 180°C/350°F/Gas mark 4. Grease a 30 x 23cm/12 x 9in   baking tin.

  2. Sift the flour, cocoa, baking powder and salt into a bowl. Cream the butter and sugar, then beat in the eggs and the vanilla essence.

  3. Stir in the dry ingredients and beat until smooth. Fold in 100g/4oz nuts. Spoon into the greased tin and bake for 30 minutes.

  4. For the peanut frosting, cream the butter and gradually mix in the icing sugar.

  5. Combine the peanut butter with the boiling water and stir into the mixture.

  6. When the brownies are cooked, spread with the frosting and decorate with the remaining nuts.
