Desserts Recipes - Fiesta Slices Recipe

Ingredients

SERVES 6

  • 100g/4oz blanched almonds

  • 150g/5oz hazelnuts

  • 100g/4oz granulated sugar

  • 25g/10z plain flour

  • 1 teaspoon ground cinnamon

  • 1 tablespoon honey

  • 1/2 tablespoon lemon juice

  • 50g/2oz mixed peel (finely chopped)

  • 2 egg whites

For the icing:

  • 100g/4oz drinking chocolate (sifted)

  • 100g/4oz icing sugar (sifted)

  • 1 tablespoon lemon juice

  • 1 tablespoon water


Method:

  1. Preheat the oven to 180°C/350°F/Gas mark 4. Grease a baking tray.

  2. Grind the almonds. Roast the hazelnuts lightly, rub off the skin, then grind.

  3. Mix all the ingredients together except the egg whites. Whisk the egg whites until stiff then fold into the mixture.

  4. Shape the mixture into 4 rolls about 30cm/12in long and place on the baking tray. Bake in the oven for 15 to 20 minutes until light brown.

  5. To make the icing, combine all the icing ingredients together.

  6. Brush the icing on the slices while still hot. Cool, then cut into 2.5cm/1in lengths.
